Raspberry syrup
Sugar syrup with fresh raspberries breaking down in it, to carry the real fruit into the drink.
Ingredients
- Sugar200 g
- Water120 ml
- Raspberry60 g
Method
- Combine the sugar and water in a small saucepan over medium heat, and stir until the sugar fully dissolves. It doesn't need to boil.
- Lower the heat, add the raspberries, and stir until they start breaking down, about 5 minutes.
- Take it off the heat and let it stand for 30 minutes.
- Strain through a fine-mesh strainer, discarding the solids. Let it cool to room temperature before using it, and keep it in a tightly sealed bottle or jar.

Makes about 300 ml

Tightly sealed in the fridge, it lasts up to 2 weeks
